Sweet chilli fish with vegies and chips

Full ingredients list:
2 tablespoons sweet chilli sauce
1 tablespoon fresh lime juice
1 tablespoon grated fresh ginger
4 frozen fish fillets (such as Sealord Simply Natural Hoki Fillets)
1/2 cup shallots, roughly chopped
2 red capsicums, roughly chopped
1 cup frozen peas
800g potatoes, roughly sliced
3 cups green beans, steamed

Instructions and steps:
Step 1 Preheat oven to 190°C. Put sweet chilli sauce, lime juice and ginger in a small bowl with 2 tablespoons water; mix well.
Step 2 Cut 4 square pieces of foil big enough to wrap fish. Place 1 fish fillet in the centre of each piece and top with sweet chilli mixture, shallot, capsicum and peas.
Step 3 Fold foil pieces to enclose fish, making 4 airtight parcels. Place parcels in an ovenproof baking dish. Spray potato slices with olive oil and add to baking dish.
Step 4 Bake for 25 minutes, or until fish is cooked and vegies are tender. Serve fish with chips and green beans.
