1 brown onion, finely chopped
1 small chorizo sausage, diced
400g Heart Smart beef mince
2 cups sliced button mushrooms
400g can no-added-salt chickpeas
2 teaspoons Moroccan seasoning
400g frozen spinach, thawed, squeezed of excess water
2 x 250g packets microwavable brown rice, to serve
chopped parsley, to garnish

Instructions and steps:
Step 1 Spray a frying pan with olive oil. Cook onion and chorizo over high heat for 3–4 minutes. Add mince and cook until browned.
Step 2 Add remaining ingredients (except rice and parsley); cook over medium heat for 10 minutes.
Step 3 Meanwhile, microwave rice according to packet instructions.
Step 4 Top rice with chickpea stew, garnish with parsley and serve.
