Full ingredients list:
450g Heart Smart beef mince
1/2 cup fresh breadcrumbs
1/2 cup rolled oats
1 egg, lightly beaten
1 large zucchini, grated
2 medium carrots, grated
2 shallots, finely chopped
1 garlic clove, finely chopped
1 tablespoon chopped parsley
1 teaspoon reduced-salt soy sauce
600g potatoes, peeled, chopped
1/3 cup skim milk
1 tablespoon reduced-fat table spread
1/4 cup Gravox Reduced Salt Traditional gravy powder
4 cups steamed greens, to serve

Instructions and steps:
Step 1 Preheat oven to 180°C. Line a loaf tin with baking paper. Place all ingredients in a large bowl; mix by hand until well combined. Press mixture into tin; smooth surface.
Step 2 Bake meat loaf for 50 minutes to 1 hour, or until juices run clear.
Step 3 Meanwhile, boil potatoes until tender. Mash potato with milk and table spread; cover to keep warm.
Step 4 Mix gravy powder with 1 1/2 cups boiling water in a heatproof jug; stir briskly until gravy is smooth.
Step 5 Serve meatloaf with a drizzle of gravy, mashed potato and greens.
