Full ingredients list:
200g pearl couscous
4 tablespoons balsamic vinegar
1 tablespoon olive oil
4 cups chopped salad vegies (such as red onion, cucumber, capsicum, tomato)
400g can no-added-salt kidney beans, rinsed, drained
1/3 cup (60g) chopped dates
4 x 100g lean lamb steaks

Instructions and steps:
Step 1 Cook pearl couscous in a medium saucepan according to packet instructions; drain.
Step 2 Combine vinegar and oil in a small bowl to make dressing.
Step 3 Place couscous, salad vegies, kidney beans and dates in a salad bowl; add dressing and toss lightly to combine.
Step 4 Spray a large non-stick frying pan with olive oil and set over high heat. Add lamb steaks to pan. Cook for 2–3 minutes per side, or until done to your liking. Remove steaks from heat and leave to rest for a few minutes.
Step 5 Slice warm lamb steaks. Divide couscous salad among serving plates, top with steak and serve.
