Beef satay with brown rice

Full ingredients list:
1 medium onion, finely sliced
400g beef minute steaks, sliced
2 tablespoons reduced-salt soy sauce
2 large carrots, finely diced
3 tablespoons no-added-sugar, no-added-salt peanut butter
1 1/2 tablespoons brown sugar
juice of 1 lemon
2 x 250g packets microwavable brown rice
2 cups steamed broccoli, to serve

Instructions and steps:
Step 1 Spray a large non-stick frying pan with olive oil and set over medium heat. Add onion; cook until soft. Add beef and cook for 3–4 minutes, or until browned.
Step 2 Add soy sauce and carrots to frying pan; cook for 4–5 minutes, or until carrots are tender. Add peanut butter, brown sugar and lemon juice to pan; stir well. Add 1 cup hot water and simmer for 2–3 minutes, or until satay sauce thickens to desired consistency; season with cracked black pepper.
Step 3 Meanwhile, cook rice according to packet instructions, then divide among 4 plates with broccoli. Top with beef satay and serve.
