Instructions and steps:
Step 1 Cut potatoes into very thin slices with a mandoline or sharp knife. Place slices in cold water as you cut, then rinse under running water until water runs clear. Dry slices with a paper towel.

Step 3 Sprinkle chips with a little spice (if using) and microwave at full power for 3 minutes. Turn chips (on plate) carefully; microwave at half power for 3 more minutes, or until chips start to crisp and brown. Remove these cooked potato chips from microwave.
Step 4 Microwave remaining chips at half power in 1-minute intervals, or until crisp and golden. Place potato chips in a large bowl and serve immediately.
