- 6 x 75ml ice-block moulds
- 6 paddle-pop sticks
- juice and zest of 3 large lemons
- 50g caster sugar
- 100ml water
- 400ml chilled water

Instructions and steps:
Step 1 Place lemon juice, lemon zest, sugar and 100ml water in a small saucepan and bring to a gentle simmer for 3–4 minutes. Remove pan from heat; set aside to cool.
Step 2 Strain mixture into a measuring jug; top up to 400ml with chilled water. Pour mixture into moulds and freeze for 1 hour.
Step 3 Remove ice-blocks from freezer, gently push a paddle-pop stick into each, and freeze for another 2–3 hours, or until solid.
You can freeze these ice-blocks for up to three months. Make enough thirst-quenchers to get you through summer!
