1 cup low-fat cottage cheese
1 tablespoon finely chopped chives
1 tablespoon chopped flat-leaf parsley
1 teaspoon lemon zest
4 large slices wholegrain sourdough
50g baby rocket
80g smoked salmon
4 lemon wedges, to serve

Instructions and steps:
Step 1 Place cottage cheese in a medium bowl with chopped herbs and lemon zest; combine to make herb cottage cheese.
Step 2 Toast or grill sourdough until golden. Place one slice of toast on each serving plate.
Step 3 Spread each slice of toast with one-quarter of the herb cottage cheese, then top with smoked salmon and baby rocket. Serve with a lemon wedge.
