1 cup (150g) plain flour
3/4 cup (110g) wholemeal flour, plus extra 2 tablespoons
2 teaspoons baking powder
11/2 teaspoons ground cinnamon
pinch of ground nutmeg
1/2 cup (100g) lightly packed brown sugar, plus extra 2 tablespoons
1 large apple, cored, diced
50g reduced-fat table spread, plus extra 20g
3/4 cup skim milk
1 teaspoon vanilla extract
1/2 cup (50g) rolled oats

Instructions and steps:
Step 1 Preheat oven to 180°C. Line 12 x 1/3-cup-capacity muffin-tray cups with paper cases. Sift flours, baking powder, cinnamon and nutmeg into a large bowl. Add unsifted flour bran (in sieve). Add sugar and apple; stir to combine.
Step 2 Melt table spread. Whisk eggs, milk and vanilla extract in a large bowl. Add melted spread and wet ingredients to dry ingredients; stir until batter is just combined. Mix extra wholemeal flour, extra sugar and oats in a medium bowl. Add extra table spread and rub with fingertips until mixture forms coarse crumbs.
Step 3 Divide batter among prepared muffin-tray cups, topping each with a little of the oat mixture. Bake for 20 minutes, or until muffins are golden brown.
Muffins taste best on the day you make them, but you can freeze them to enjoy later, wrapped individually in clingfilm.
