cooking oil spray
1 x 165g thin wholemeal pizza base, such as Bazaar Gourmet
1/2 cup caramelised-onion relish
1 lean chicken breast (150g), cooked, diced
2 cups sliced button mushrooms
1 cup diced cooked pumpkin
1 parsnip, cooked, diced
200g extra-light ricotta
1/2 cup grated reduced-fat mozzarella or tasty cheese
1/2 cup rocket

Instructions and steps:
Step 1 Preheat oven to 200°C. Spray a large baking tray, pizza pan or pizza stone with cooking oil. Place pizza base on tray, pan or stone. Spread base with relish; top with chicken and vegies.
Step 2 Spoon ricotta onto pizza and sprinkle with cheese. Bake for 10–12 minutes, or until cheese melts and crust is crisp.
Step 3 Top cooked pizza with rocket; season with black pepper. Serve.
