Step 1 Place mince, garlic, shallot, paprika, cumin, thyme, sage, half of the chilli and 1 of the eggs in a large bowl; season with cracked black pepper. Combine mixture by hand and shape into 4 patties.
Step 2 Spray a grill pan or barbecue hotplate with cooking oil; set pan over high heat. Cook patties, turning, for 10–15 minutes, or until cooked through.
Step 3 Meanwhile, preheat a grill pan or barbecue hotplate to high heat. Make fritters: Combine remaining 2 eggs and chilli, sweet potato and mint in a large bowl with a little cracked black pepper. Shape 8 fritters by hand and place on grill pan (or hotplate); cook for 10 minutes, or until browned and cooked through.
Step 4 Set a large frying pan over medium heat and spray with cooking oil. Cook silverbeet for 5 minutes, or until soft.
Step 5 Place each burger between 2 fritters. Garnish with coriander and serve with silverbeet and cherry tomatoes on the side.
