Full ingredients list:
150g gluten-free natural muesli with dried fruit
3/4 cup walnuts
1/3 cup shredded coconut, plus extra 1/4 cup
4 tablespoons black chia seeds
1 teaspoon cinnamon
1 tablespoon pure cocoa powder
2 teaspoons vanilla extract
2 cups (400g) pitted dates, roughly chopped

Instructions and steps:
Step 1 Line an 18cm x 28cm slice tin with baking paper, leaving a 2cm overhang at long sides.
Step 2 Place all ingredients, except dates, in a food processor and blend until well combined.
Step 3 Add dates to food processor in batches (one-third at a time), blending between additions until mixture starts to combine. Pour 1/4 cup water into processor funnel so mixture forms a soft ball.
Step 4 Press mixture into prepared tin. Level surface with the back of a spoon; top with extra coconut.
Step 5 Cover tin with cling wrap; chill in fridge for at least 1 1/2 hours. Cut slice into 18 bars and serve.
