Full ingredients list:
100g reduced-fat table spread
1/2 cup honey
2 eggs, lightly beaten
2 cups rolled oats
1/2 cup self-raising flour
2 teaspoons mixed spice
1 cup diced dried apricots
1 cup dried cranberries
2/3 cup goji berries (see HFG Tip)
2/3 cup sunflower seeds

Instructions and steps:
Step 1 Preheat oven to 160°C. Line a 20cm x 30cm slice tin with a sheet of baking paper, leaving a 2cm overhang at long sides.
Step 2 Melt table spread and honey in a small saucepan set over low heat; leave to cool completely. Whisk eggs into honey mixture.
Step 3 Place remaining ingredients in a large bowl. Add honey mixture to bowl and stir to combine. Press mixture into prepared slice tin; smooth surface with a spatula.
Step 4 Bake for 25 minutes, or until golden; leave to cool completely in tin, then cut into bars.
Goji berries are available in the health-food aisle of your local supermarket and at most health food stores.
