- 3 egg whites
- 3/4 cup caster sugar
- 1/2 cup hazelnut meal
- 1 tablespoon pure cocoa powder

Instructions and steps:
Step 1 Preheat oven to 120°C. Line a large baking tray with baking paper. Put egg whites in a large mixing bowl. Whisk whites into soft peaks with an electric mixer, slowly adding sugar and beating for 1 more minute, or until peaks are stiff, smooth and glossy. Fold hazelnut meal into peaks, then fold in cocoa powder lightly to create a swirl of colour.
Step 2 Use a teaspoon to put dollops of meringue mixture on prepared baking tray (using 2 teaspoonfuls per meringue) and leaving at least 1cm between dollops.
Step 3 Transfer tray to oven to bake for 25–30 minutes, or until meringues are crisp and remain intact when lifted. Leave meringues to cool in oven with door ajar, then serve.
