Full ingredients list:
180g dried soba noodles
200g Japanese marinated tofu, thinly sliced
2 x 300g packets shredded stir-fry vegetable mix
1 1/2 tablespoons reduced-salt soy sauce
1 tablespoon mirin
1 teaspoon sesame oil
1 tablespoon sesame seeds, lightly toasted

Instructions and steps:
Step 1Cook noodles according to packet instructions until al dente; rinse under cold water and drain.
Step 2Transfer noodles to a salad bowl. Add tofu, veg, soy sauce, mirin, sesame oil and half the sesame seeds; toss to combine.
Step 3Garnish salad with remaining sesame seeds and serve.
