Roast beef and mustard rolls

Full ingredients list:
1/4 cup orange juice (juice of 1/2 orange)
2 tablespoons wholegrain mustard
300g leftover roast beef, trimmed, thinly sliced
4 grainy panini rolls
2 cups baby spinach
2 medium tomatoes, sliced
1 Lebanese cucumber, peeled into ribbons
225g can sliced beetroot, drained
1/3 cup mixed herbs (such as parsley and chives), chopped

Instructions and steps:
Step 1 Combine orange juice and mustard in a small bowl; mix well. Add sliced roast beef to bowl and toss to coat; leave to marinate for a few minutes. Cut panini rolls in half lengthways.
Step 2 Drain beef of excess mustard mixture. Fill each panini roll with baby spinach, mustard roast beef, tomato slices, cucumber ribbons and beetroot slices. Top filling with chopped herbs and serve.
