Step 1 Preheat oven to 200°C. Warm tortilla in microwave for around 30 seconds, or until soft. Spray both tortilla sides with olive oil.
Step 2 Press warm tortilla into a small ovenproof dish. Press a sheet of foil onto tortilla to hold its basket shape. Bake tortilla for 5 minutes, or until crisp. Remove dish from oven and leave tortilla basket to cool slightly, then remove basket from dish and discard foil.
Step 3 Place chopped cooked chicken, shallots, cos lettuce and capsicum in a medium salad bowl with sliced radishes, kidney beans, coriander leaves and diced avocado; toss to combine.
Step 4 Combine lime juice (or lemon juice), olive oil and chilli flakes in a small bowl to make dressing; add to salad bowl and toss.
Step 5 Spoon salad into cool tortilla basket. Garnish any remaining salad with extra coriander and serve with salad basket.
