Step 1 Preheat oven to 200°C. Place carrot, pumpkin and onion in a large baking dish and spray with olive oil. Roast for 30 minutes, or until golden and tender.
Step 2 Meanwhile, cook pasta according to packet instructions. Drain pasta; set aside, reserving 1/4 cup of the pasta water.
Step 3 Spray a medium non-stick frying pan with olive oil and set over a medium-high heat. Cook chicken for 3-4 minutes, or until browned and cooked through.
Step 4 Remove vegetables from the oven. Add pasta, cherry tomatoes and silverbeet to baking dish. Toss to combine, adding reserved pasta water to form a thin sauce.
Step 5 Garnish pasta with grated parmesan and cracked black pepper, and serve.
