Full ingredients list:
2 tablespoons reduced-fat
1 tablespoon lemon juice
1 teaspoon wholegrain mustard
1/2 teaspoon olive oil
1 small carrot, peeled into ribbons or julienned
1/2 small Lebanese cucumber, chopped
1/2 cup green beans, blanched, halved
3/4 cup no-added-salt canned chickpeas, rinsed, drained
3/4 cup shredded cooked chicken breast
1 cup rocket
1 tablespoon grated parmesan

Instructions and steps:
Step 1Combine dressing ingredients and mix well. Place dressing in the bottom of a 750–900ml jar.
Step2 Layer salad ingredients into the jar in order listed. Screw lid on tightly and store in fridge.
Step 3To serve, tip salad into a large bowl and mix well to combine.
