Full ingredients list:
100g firm tofu, cubed
1 tablespoon sesame seeds
1 shallot, thinly sliced, green part only
1 teaspoon grated ginger
1/2 garlic clove, finely chopped
1/4 red chilli, deseeded, chopped
1 teaspoon sesame oil
1/2 cup broccoli florets, thinly sliced
1 small carrot, thinly sliced
1/2 bunch bok choy (or any Asian greens), thinly sliced lengthways
2 teaspoons reduced-salt soy sauce
125g cup microwavable brown rice
juice of 1/2 lime

Instructions and steps:
Step 1Spray a non-stick frying pan with olive oil and set over high heat. Cook the tofu and sesame seeds until browned and crispy. Remove from pan and set aside.
Step 2Return same pan to a medium heat and add sesame oil. Stir-fry shallot, ginger, garlic and chilli until fragrant. Add vegies, then soy sauce and a splash of water. Increase heat and cover. Steam for 3–4 minutes. Meanwhile, heat rice according to packet instructions.
Step 3Add the sesame tofu and toss through. Squeeze lime juice on top and serve with brown rice.
