Step 1Soak noodles in boiling water for 10–15 minutes, or until tender. Drain; transfer to large salad bowl.
Step 2Make lime dressing: Combine all of the ingredients in a small bowl. Add the dressing to the noodles; toss to combine.
Step 3Top noodles with the bean sprouts, coleslaw mix, snow peas and coriander leaves. Cover and refrigerate until required. Do not toss salad at this stage.
Step 4Brush the pork with chilli jam. Heat a barbecue hotplate to medium and grill pork on low heat for 8–10 minutes, turning a few times, to brown all sides. Remove pork from heat, wrap in foil and rest for 5 minutes. Slice pork into thick pieces.
Step 5To serve, toss salad ingredients with the noodles and then divide between 4 serving bowls. Top each bowl with sliced pork and serve with lime wedges.
