4 pitted Medjool dates, roughly chopped
1/3 cup reduced-fat milk, plus a little more if needed
1/2 teaspoon vanilla extract
1 1/2 cups reduced-fat vanilla yoghurt
1 banana, sliced
8 teaspoons chopped roasted peanuts

Instructions and steps:
Step 1Place dates in a dish, cover with boiling water and set aside for 5 minutes until soft.
Step 2Blitz dates, milk and vanilla in a small food processor for 1 minute, or until smooth (add more milk if needed). Cook date mixture for 5–10 minutes, or until it thickens and darkens. Cool slightly.
Step 3Divide yoghurt between 4 bowls. Swirl through 1 tablespoon of date caramel into each bowl. Top with sliced banana and peanuts and serve.
