Ham, couscous and lentil salad

Full ingredients list:
2/3 cup (135g) wholemeal couscous
400g can no-added-salt lentils, rinsed, drained
150g leftover lean ham off-the-bone, chopped
2 medium carrots, peeled, grated
1 large red capsicum, seeded, diced
4 shallots, thinly sliced
2 tablespoons currants
100g baby rocket leaves
2 tablespoons orange juice
2 teaspoons olive oil
2 teaspoons white wine vinegar

Instructions and steps:
Step 1Place couscous in a large heatproof bowl. Add 2/3 cup of boiling water and stir to combine. Cover, set aside for 4 minutes. Fluff and separate grains with a fork.
Step 2Add the lentils, ham, carrot, capsicum, shallots, currants and rocket to couscous. Season with cracked black pepper.
Step 3Combine the orange juice, olive oil and vinegar in a small bowl. Add to salad, gently toss to combine. Serve.
