French onion soup

Full ingredients list:
- 1 tablespoon reduced-fat table spread
- 1 tablespoon olive oil
- 1.2kg brown onions, halved lengthways, thinly sliced
- 1 tablespoon plain flour
- 2 cups reduced-salt vegie stock
- 4 thick slices sourdough bread
- 1/2 cup grated reduced-fat cheddar cheese

Instructions and steps:
Step 1 Heat spread and oil in a large, deep saucepan over medium heat. Add onions and cook, stirring, for 5 minutes, until golden. Reduce heat to low and cook, partially covered, for about 40 minutes, stirring occasionally. Add flour and stir to combine.
Step 2 Slowly add stock and 6 cups water, stirring constantly until combined. Bring to the boil, then reduce heat. Simmer for 15 minutes.
Step 3 Meanwhile, preheat grill. Grill bread on both sides until golden. Top each slice with cheese then grill until cheese has melted. Place a piece of toast into each bowl. Ladle soup over toast and serve immediately.
